Ingredients
- 2 boneless, skinless chicken breasts
- 2 tablespoons Cajun seasoning
- 8 ounces pasta (e.g., penne or fettuccine)
- 1 cup heavy cream
- 1 cup chicken broth
- 1 tablespoon olive oil
- 1 small onion, diced
- 2 cloves garlic, minced
- Salt and pepper to taste
- Parmesan cheese for garnish
- Chopped parsley for garnish
Instructions
- Cook the pasta according to package instructions. Drain and set aside.
- Season the chicken with Cajun seasoning to coat evenly.
- Sear the chicken in a skillet with olive oil over medium heat until golden brown, about 5-7 minutes per side. Remove and let rest.
- Sauté the diced onion and minced garlic in the same skillet until fragrant.
- Make the sauce by adding chicken broth and heavy cream; simmer until it thickens slightly.
- Combine cooked pasta and sliced chicken back in the skillet, tossing until heated through.
- Season with salt and pepper to taste.
