Description

A hearty and savory lasagna layered with roasted butternut squash, fresh spinach, and a blend of cheeses, baked to golden perfection.


Ingredients

  • Lasagna noodles
  • 1 medium butternut squash, peeled and diced
  • 2 cups fresh spinach
  • 2 cups ricotta cheese
  • 2 cups shredded mozzarella cheese
  • 1 cup grated Parmesan cheese
  • 2 cups marinara sauce
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • 1 teaspoon dried oregano


Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Heat olive oil over medium heat in a pan. Add the diced butternut squash and sauté until tender, about 10 minutes. Stir in the spinach and cook until just wilted. Season with salt, pepper, and dried oregano.
  3. Spread a layer of marinara sauce on the bottom of a baking dish. Lay down a layer of lasagna noodles, then add a portion of the butternut squash and spinach mixture, followed by a layer of ricotta cheese and a layer of mozzarella cheese.
  4. Repeat the layers in the same order, finishing with a final layer of noodles topped with marinara sauce.
  5. Sprinkle grated Parmesan cheese over the top layer.
  6. Cover the dish with foil and bake for 25 minutes. Remove the foil and bake for another 15 minutes until bubbly and golden.
  7. Let it cool slightly before slicing and serving.

Notes

This lasagna can be prepared ahead of time and refrigerated until ready to bake.
