Description

Delicious and fluffy pancake poppers, perfect for breakfast or brunch. Customizable with your favorite fruits or chocolates.


Ingredients

  • 2 cups All-purpose flour
  • 1/4 cup Granulated sugar
  • 1 tbsp Baking powder
  • 1/2 tsp Salt
  • 1 3/4 cups Milk
  • 2 large Eggs
  • 1/4 cup Unsalted butter, melted
  • 1 tsp Vanilla extract
  • 1/2 cup Mix-ins (optional: Blueberries, chocolate chips, bananas, or strawberries)


Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Combine the flour, sugar, baking powder, and salt in a large bowl.
  3. Whisk together the milk, eggs, melted butter, and vanilla extract in another bowl until smooth.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined.
  5. Fold in any desired mix-ins such as blueberries or chocolate chips.
  6. Grease a mini muffin tin and scoop the batter into each cavity, filling them about ¾ full.
  7. Bake in the preheated oven for 12–15 minutes, or until golden brown and a toothpick inserted comes out clean.
  8. Allow the pancake poppers to rest in the tin for 5 minutes before removing them.
  9. Serve warm with maple syrup, powdered sugar, or your favorite toppings.

Notes

These pancake poppers are best enjoyed warm and can be stored for up to 3 days in an airtight container in the fridge.
