  • 1 cup all-purpose flour
  • 1/2 cup brown sugar
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 1 egg
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup Biscoff spread


Instructions

  1. Preheat your oven to 350°F (175°C) and grease a muffin tin.
  2. Cream the softened butter, brown sugar, and granulated sugar in a large mixing bowl until light and fluffy.
  3. Crack in the egg and add the vanilla extract, beating until combined.
  4. Whisk the flour, baking soda, and salt in a separate bowl.
  5. Gradually mix the dry ingredients into the wet ingredients until just combined.
  6. Divide the cookie dough among the muffin cups, filling each halfway.
  7. Place a teaspoon of Biscoff spread in the center of each cup and top with more cookie dough.
