Description

Ingredients

  • 2 cups sweet potatoes (diced)
  • 2 cups cooked chicken (shredded)
  • 1 cup corn (frozen or canned)
  • 1 cup BBQ sauce (your favorite brand)
  • 1 medium red onion (diced)
  • 1 teaspoon smoked paprika
  • 1 cup cheddar cheese (shredded)
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 2 tablespoons green onions (chopped)


Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add the diced sweet potatoes and cook for about 10-12 minutes, stirring occasionally, until they’re tender and starting to brown.
  3. Stir in the diced red onion and cook for an additional 2-3 minutes until fragrant and soft.
  4. Add the shredded chicken, corn, BBQ sauce, smoked paprika, salt, and pepper to the skillet. Mix well.
  5. Cook for about 5-7 minutes until everything is heated through and the flavors meld together. Stir occasionally.
  6. Sprinkle the shredded cheddar cheese over the top of the mixture. Cover and let it sit for a few minutes until the cheese is melted.
  7. Garnish with chopped green onions before serving.

Notes

Fresh corn off the cob can elevate the dish. Use gluten-free BBQ sauce if needed. Consider adding bell peppers or black beans for extra color and texture.
