Description

BBQ Chicken Soup is a comforting dish loaded with smoky BBQ flavors, tender chicken, and vibrant vegetables, perfect for cozy evenings.

Ingredients

  • 2 cups cooked chicken, shredded
  • 4 cups chicken broth
  • 1 cup BBQ sauce
  • 1 cup corn (frozen or canned)
  • 1 cup diced tomatoes
  • 1/2 cup chopped onion
  • 1/2 cup diced bell pepper
  • 2 cloves garlic, minced
  • 1 tsp paprika
  • Salt and pepper to taste
  • Chopped green onions for garnish

Instructions

  1. Heat a small amount of oil in a large pot over medium heat. Sauté the chopped onion, diced bell pepper, and minced garlic until tender, about 5 minutes.
  2. Pour in the chicken broth and stir in the BBQ sauce, shredded chicken, corn, diced tomatoes, and paprika. Mix well.
  3. Bring the mixture to a gentle boil. Once boiling, reduce the heat and let it simmer for 20-30 minutes.
  4. Season with salt and pepper to taste, adjusting as needed.
  5. Serve hot, garnished with a sprinkle of chopped green onions.

Notes

Feel free to use store-bought rotisserie chicken to save time. For a tangy kick, opt for a vinegar-based BBQ sauce.
