Description
Quick and delicious Greek kofta kebabs baked to perfection and served with a refreshing tzatziki sauce.
Ingredients
- 2 pounds ground beef or lamb
- ½ large onion, roughly chopped into quarters
- 2 garlic cloves
- 1 bunch of parsley, stems removed
- ½ teaspoon ground cumin (omit for AIP)
- 1 teaspoon cinnamon
- 1 teaspoon salt
- ½ teaspoon ground black pepper (omit for AIP)
- 2 teaspoons dried oregano
- 2-3 mini seedless cucumbers or ½ large seedless cucumber
- ½ teaspoon salt
- ½ – ¾ cup unsweetened coconut yogurt
- 1 garlic clove, minced
- 1 teaspoon chopped dill
- ½ lemon, juiced
- Olive oil to drizzle on top (optional)
Instructions
- Prepare the cucumber by grating it and placing it in a towel-lined colander. Sprinkle with salt and let drain for about 15 minutes.
- Make the kebabs by soaking bamboo skewers in water for 15 minutes or using stainless steel skewers. Preheat the oven to 425°F (220°C).
- Combine the ground meat in a large mixing bowl. Pulse the onion in a food processor until finely chopped, then add to the meat mixture after draining excess liquid.
- Pulse the garlic and parsley in the food processor. Add to the bowl with the meat along with the spices. Mix well until combined.
- Form the meat mixture around the skewers to shape into oval kebabs approximately 1½ inches thick, making about 9 kebabs.
- Place the kebabs on a lined baking sheet and bake for 12-15 minutes. Use the broiler for a couple of minutes at the end for a crispy exterior.
- Make the tzatziki by mixing drained cucumber with coconut yogurt, minced garlic, chopped dill, and lemon juice.
- Serve the tzatziki alongside the kofta kebabs and enjoy the delicious flavors!
